Beauty From The Inside Out…Recipe

This has become one of my favorite egg recipes, so I thought I would share with you. I love Feta cheese, and I wanted to think about what other dishes I could add it to, and I think it tastes great with eggs. This inspired me to come up with my Greek-inspired egg cups. Here you go:

6 eggs
4 egg whites

2 cups chopped spinach
1 small shallot
1/2 cup chopped roasted red peppers
1 cup chopped mushrooms
1/4 cup Kalamata olives
1 tbsp. water
1 cup Athenos Feta Cheese (my favorite ingredient!)

Mix the eggs, egg whites and water together and add the remaining ingredients and mix together. Pour into greased (I use spray to keep it light) muffin pan. Fill cups about 3/4 of the way.
Before 1

Bake at 350 for 18-22 minutes and enjoy!
After 1

Serve with a small amount of plain Greek yogurt instead of sour cream! They’re really hot at first, so let them sit for a bit. These are great, let me know if you try them!
